Farmhouse Cheese with thermised milk is cheese that is made in small-scale cheese factories on the farm. The unprocessed milk is briefly heated to a maximum of 68 degrees Celsius to eliminate the enzymes and bacteria in the raw milk. This process is known as thermisation. This increases food safety and product stability, which boosts opportunities for export.
Because it is heated at a relatively low temperature, the cheese retains its characteristic full flavor. The Dutch Food and Consumer Product Safety Authority (NVWA) and the Dutch Controlling Authority for Milk and Milk Products (COKZ) strictly control the food safety and quality of Farmhouse Cheese.
