It won’t be long before the cows will entree the pasture again to enjoy the first fresh, tender grass. And that is something you can taste in the cheese! Cheese that is made from this milk is called grass cheese. This cheese contains more unsaturated fatty acids and is extra smooth. The cheese must first mature for at least 4 weeks, so we will have to be patient. We expect to have the first grass cheese in stick in May / June.
